Automatic computer controlled production of Cottage cheese at Sonderborg Dairy



North European Dairy Journal 51(2): 28-32



A new Cottage cheese plant at Sonderborg, Denmark, is described, which uses separate vats for production and draining/creaming. The Damrow Double-O production vat has specially designed knives which give a gentler action during cutting and stirring, resulting in measurable increases in yield. Chemical acidification is used and temp., cutting, stirring, draining and washing are computer controlled.
