Bacteriological status of muscle tissue from broilers during rearing and after slaughter
The microbial count of muscle tissue removed under sterile conditions from 203 broilers was log 2.5-3.0 per gram. Microorganisms present were mainly actinomycetes, streptococci, lactobacilli and staphylococci. Colonization of muscle by staphylococci may have originated from skin lesions.
