Color and optical properties of clingstone peaches related to maturity

Color and optical properties of clingstone peaches related to maturity

Transactions of the ASAE, American Society of Agricultural Engineers 30(6): 1873-1879

Optical properties of clingstone peaches from 9 cultivars in 3 maturity categories were measured by tristimulus colorimeter and spectrophotometer. Significant difference in skin and flesh (fresh and canned) colour occurred among cultivars, maturity levels, and flesh positions. Present flesh colour maturity charts did not match the calculated flesh colour coordinates. The largest spectral differences due to maturity occurred at 670 nm, with minor differences in the 500-600 nm region.
