Composition of goats' milk and effect of feeding on cheesemaking ability

Composition of goats' milk is compared with that of cows' and ewes' milk. Composition of goats' milk and milk production may be affected by season, energy intake, presentation of diet and amount of concentrates in the diet. Manufacture of cheese from goats' milk is affected by dietary protein:fat ratio and by protein and urea content of diet.
