48 lamb carcasses imported into France from the UK and Spain differed significantly in conformation score (3.52 and 2.25 resp. on a 1-5 scale), external fat score (3.71 and 3.05), muscle percentage (60.28 and 58.54), shoulder fat percentage (21.50 and 20.53), bone percentage (17.36 and 20.19), shear force (6.44 and 5.41 lb per cmsuperscript 2), water retention capacity (12.39 and 8.91%) and flavour (42.66 and 52.00 on a 1-100 scale).
