Control of gas production in Grana and Provolone cheeses

Scienza e Tecnica Lattiero Casearia 38(2): 117-145

In Grana cheese, gas production is mainly butyric fermentation from Clostridium tyrobutyricum or propionic fermentation from Propionibacterium shermanii. In Provolone cheese it is from heterofermentation from Lactobacillus fermentum. The defects in the 2 cheeses are described and illustrated, and methods for their control are reviewed.
