Control of skim milk agglutination by addition of lecithin to bulk culture and/or homogenization of bulk culture

Proteinase negative Streptococcus cremoris 310 was cultured in media containing 0, 0.5, 1.0 or 2.0% lecithin. One-half of each medium was then homogenized, and the cultures inoculated into pasteurized skim milk.
