Control of the nitrate content of spinach in the pre-harvest period by a rapid nitrate test

A test is described which is based on the colour reaction of nitrate with diphenylamine + sulphuric acid reagent in stalk segments of the uppermost fully-developed leaves. The values obtained in trials correlated closely with the nitrate content in aerial parts of field-grown spinach plants. The test could be used for assessing the suitability of the crop for fresh market, processing and infant food and for planning the sequence of harvesting.
