Dairying subjects discussed at the "XV Seminar on Food Quality and Raw Materials of Animal Origin", held on 28 Jan. 1988 in Brno, Czechoslovakia, included quality control in the dairy industry (new Czechoslovak standards, types of control and devices used, provision of central laboratories); analyses of biogenic amines in cultured milk products and difficulties with the interpretation of the results in relation to hygienic quality of the products; study of hygiene on farms that will be supplying milk for producing infant food in a centralized factory (capacity 300 000 litre/day); and quality of apportioned hard cheeses; determination of formaldehyde and acetoin in milk by liquid chromatography, and effects of use of niacin on the yield and composition of cow milk.
