In 3-year trials Williams' Bon Chretien pears harvested at optimum maturity were cooled to -0.5 degrees C, placed in polyethylene bags and stored in different O2 and CO2 concentrations at -0.5 degrees for different periods, and then ripened at 20 degrees. In the first year, the storage life in 3% O2 + 0% CO2 was only 8 weeks, with a shelf life of 4-5 days. After 8 weeks, internal breakdown occurred (reaching 20 and 100% at 12 and 16 weeks, respectively).
