Controlled atmosphere storage of bananas in bunches at ambient temperatures

Controlled atmosphere storage of bananas in bunches at ambient temperatures

CSIRO Food Research Quarterly 47(3): 61-63

The construction of a low-cost plastic room (5760 litres in volume) for the CA storage of bananas is described. It was tested using bunches of preclimacteric bananas (cv. Williams) stored in an atmosphere of 2% O2 and 5% CO2; ethylene was removed from the atmosphere by means of an ethylene scrubbing box. A 5-fold increase in storage life was obtained for the CA-stored fruit compared with bananas stored in air at the same temperature.
