EC grants for use of dried skim milk for animal feeding require absence of whey, but not buttermilk. The presence of the latter product can make it difficult to detect added whey by the official method of analysis, based on determination of sialic acid, since hydrolysis of kappa -casein by lactic acid bacteria used for cream ripening causes separation of peptides, some of which contain sialic acid.
