Effect of clotting in stomachs of infants on protein digestibility of milk

Differences in clotting between human milk and cow milk in the stomachs of infants are reviewed. Gastric pH in infants after ingesting milk is about 4. Gastric emptying time is shorter with human milk, which produces a fine coagulum at this pH, than with cow milk, which produces a firm clot.
