Effects of castration and breed-type on the growth and distribution of muscle, fat and bone in cattle

Data are presented on carcass composition and relative growth rates of muscles and fat depots in Hereford, crossbred Hereford and crossbred Shorthorn bulls and steers, and bulls and steers of a synthetic type including Charolais, Aberdeen-Angus and Galloway inheritance (43-59 animals per breed type). The results confirmed the advantages of late-maturing over early-maturing types, and of bulls over steers.
