Effects of different conditions of cold storage upon physicochemical changes of kiwi fruit

The effects of intermittent high CO2 (30%) exposure, severe hypoxia or pre-dipping in CaCl2 solution were studied and compared with those obtained in normal air (control) or CA (2% O2 + 5% CO2), with special emphasis on the initial 10 weeks of storage. In the control, the fruit softened rapidly during the first 10 weeks and more slowly after this period.
