Effects of electrical stunning of slaughter pigs on meat quality



Fleischwirtschaft 68(3): 259, 262, 264, 340



A total of 521 carcasses of electrically stunned pigs were examined for meat quality faults in three slaughterhouses, 350 of the carcasses also being examined after cutting up. When animals were stunned with tongs no preferences were evident between those stunned with 180 volts and those stunned with 250 volts.
