Hydrolysis of lactose in reconstituted skim milk (12% TS) by the immobilized beta -galactosidase preparation Sumylact (Aspergillus oryzae beta -galactosidase on macropore phenol-formalin resin) increased with temp. to 61 degrees C and then decreased; max. hydrolysis after 30 min was about 30%. However, the enzyme lost activity when held at >53 degrees C. Hydrolysis increased linearly with the TS content of skim milk to 15%, and then tended to remain constant.
