A method for the production of cultured milks features the use of a streptococcal culture isolated from ewe milk Hradka cheese. According to 1 of 2 examples, pasteurized milk (100 litres) with 3.6% fat, after cooling to 30 degrees C, is inoculated with 1 litre of the streptococcal culture (code ZS 25 in culture collection), 0.1 litres cream culture and 0.01 litres yoghurt culture and incubated over 16-20 h. It is then cooled, stirred and packaged in retail containers.
