The packaging material is for controlling ripening and prolonging shelf-life of unripened cheeses particularly Soft cheeses. It comprises a semi-permeable inner layer of food gel (alginate, carrageenan, gelatin, protein), which regulates the 2-way exchange of substances (e.g. enzymes, gases, salt, amino acids). Surrounding this is a zone of free and masked sections; cheese rind flora are able to grow in the free sections but not in the masked sections.
