Processed cheese spread was made using (i) 36.5% dried acidified skim milk (bascee), (ii) 14.6% bascee plus 43.8% skim milk retentate (R) (24% TS), (iii) 21.9% bascee plus 29.2% (R) or (iv) 36.5% renneted R. Spreads were stored at room temp. for up to 60 days.
