A new beta -lactoglobulin variant in bovine milk

Scienza e Tecnica Lattiero Casearia 39(6): 439-422

The paper reports the occurrence of a new beta -lactoglobulin variant found in one Friesian milk sample. Electrophoretic analysis on starch-urea gel at pH 8.6 revealed this new variant, which was designated beta -lactoglobulin H. In alkaline media this variant migrates faster than the beta -lactoglobulin A variant.
