Activation in vitro and antibacterial effects of lactoperoxidase-thiocyanate-hydrogen peroxide system in bovine milk

Lactoperoxidase-thiocyanate-hydrogen peroxide system (LPS) in mixed raw milk of 20 cows was activated in vitro by adding diluted H2O2 and its antibacterial activity was assessed by titration acidity of the milk, in which SCN- concn. was measured by its chelation with Fe3+. Results showed that SCN- was oxidised by LPS-catalysed-H2O2 and decreased 5 min after adding H2O2 at 30 degrees C from 100 to 57% when H2O2 was increased from 0 to 0.5 mmol/litre.
