Breeding of rye for high falling number

To improve baking quality in rye, 3 methods were used at Laski to reduce alpha -amylase activity (as measured by the falling number test): (1) selection in Dankowskie Zote, (2) crossing Dankowskie Zote with the high-quality Swedish Otello, and (3) transgressive recombination based on a population derived from complex crosses.
