Culturing feed yeasts Candida tropicalis on apple wine materials

The yeast Candida tropicalis effectively breaks down and assimilates sugar from wine material but acts less effectively on ethanol which occurs in the culture liquid at 1.5 to 0.5% even when the culture solution is diluted 10- to 20-fold. Yeast is also capable of accumulating ethanol during aerobic glycolysis.
