The following uses for whey are briefly discussed: condensing and drying for use as ingredient in various foods and animal feeds; demineralization for use in infant formulae and other medical and nutritional preparations; whey drinks; lactose production; ultrafiltration (UF) to produce whey protein concentrate which has various functional properties that can be utilized in the food and dairy industries; and production of lactose and alcohol from UF permeate.
