Cyanogenbromide fragmentation of alpha -galactosidase from coconut

alpha -Galactosidase is used in industry to remove raffinose from soyabean products and is also used in beet sugar production. alpha -Galactosidase from coconut has been purified to homogeneity and the amino acid content has been determined. Chemical modification of coconut alpha -galactosidase has indicated the presence of one tyrosine, one tryptophan and two carboxyl groups at or near the active site. Based on these results a mechanism of action for alpha -galactosidase has been proposed.
