Effect of cold storage on physico-chemical properties of goat's and ewe's milk

Bulk raw goat or ewe milk samples were stored at 4-5 degrees C for up to 48 h. Av. values for goat milk at 0 and 48 h resp. were pH 6.65 and 6.57; titratable acidity 0.16 and 0.18%; total N 575 and 585 mg/100 ml; non-protein N 41 and 59 mg/100 ml; casein micelle diam. 698 and 678 A; and rennet coagulation time 29 and 34 min.
