After discussing in general terms the highly centralized cheese industry in Switzerland (about 1600 cheese factories), the authors describe specific operations, covering in considerable detail the manufacture of Emmental cheese in a plant using two 1000-litre vats, a large cheese ripening store (ripening rooms area of 22 347 msuperscript 2) incorporating a deep-freeze section, and a large processed cheese factory with annual output of 3000-4000 t cheese.
