Fast and reliable organic acid determination in fermented milk using an enzyme-electrode based analyser

L-Lactic acid and pyruvic acid were measured in milk products without pretreatment in the range 1 x 10-4 M to 1 x 10-2 M and 1 x 10-4 M to 5 x 10-2 M resp., using an enzyme electrode-based analyser allowing subtraction of eventual interferences arising from the spontaneous oxidation of metabolites. Results were displayed 30-45 s after a 20 micro l-sample injection and were directly expressed in mM. Injections could be made at intervals of 90-120 s (including automatic washing of the cell).
