Heavy metals and chlorinated hydrocarbons in marine fish products



Nutrition reports international 38(6): 1157-1161



An analytical survey of the concentrations of arsenic, cadmium, lead, mercury, selenium, PCBs and p,p'-DDE in marine shellfish and finfish is presented. None of the metal concentrations found would constitute a hazard to consumers. The forms of the metals in the fish, their bioavailability to consumers and element to element interactions are discussed. PCBs and p,p'-DDE were not detected in any of the samples.
