How to control Listeria in dairy plants

Of the 7 species of Listeria, Listeria monocytogenes is the major pathogen, and mortality in 'at risk' groups such as pregnant women, infants and the immunocompromised may reach 48%. This article highlights areas in the dairy industry where strict control is necessary if the risk of listeriosis is to be reduced.
