Imitation dairy products - the identity problem

This article summarizes the main points from a Research Scholarship Award report available from the Institute of Trading Standards Administration. Imitation milk products fall into 4 categories: yellow fats, cream substitutes, imitation cheese and beverages. Yellow fats include margarines, low-fat spreads and spreadable blends (which may contain as little as 15% butter).
