The lactoperoxidase-thiocyanate-hydrogen peroxide antimicrobial system (LP-S) of milk inhibits the growth of some gram-negative and gram-positive bacteria. The effect of the LP-S on the growth of L. monocytogenes (L.m.) was tested. The model LP-S had KSCN and H2O2 at 0.3 mM in pre-sterilized Tryptic Soy broth plus 0.5% yeast extract (TSBYE) followed by the addition of lactoperoxidase (0.4 iu/ml).
