A routine method for enumerating lipolytic organisms is described. A test portion or series of decimal dilutions is mixed with opaque peptone yeast extract agar of pH 7.5, containing tributyrin, and incubated at 30 degrees C for 3 days (or 6 days if development of yeasts or moulds is expected).
