This fourth volume of a comprehensive series is concerned with the nutritional care of the sick. Standardized balanced diets, well tried and tested, are presented in the form of complete quantified menus, with the requisite recipes, covering all meals and snacks for each of 28 days. Nutrient values and ratios are shown, as well as absolute amounts of 27 or more nutrients supplied daily by the individual menus with each diet.
