Performance of a plate heat exchanger in commercial pasteurization of milk as influenced by milk deposits was studied. Performance is described in terms of milk flow rate, overall heat transfer coeff., resistance to heat transfer due to milk deposits, and thermal efficiency. Equations for predicting time variation of milk flow rate, heat transfer coeff. and fouling resistance are proposed.
