Polyphenolics and their possible effect on nutritive value

Some of the available evidence for the role of polyphenolics as potential and actual anti-nutritional factors is presented, outlining their negative effects on the digestibility of various nutrients in monogastric livestock. The interactions of condensed tannins both in vitro and in vivo are reviewed in relation to dietary proteins and endogenous intestinal enzyme secretions, both of which are potential substrates for these highly reactive flavan-3-ol and flavan-3,4-ol oligomers.
