Single-strain cultures of Streptococcus lactis, S. thermophilus and Lactobacillus bulgaricus were spray-dried using 2 outlet temp. and 2 types of atomizer. Inlet temp. was 190-200 degrees C. With outlet temp. of 80-82 degrees C, the percentage survival of the 3 organisms resp. was 0.93, 7.75 and 0.92% with a centrifugal atomizer and 2.20, 11.80 and 1.14% with a 2-fluid atomizer.
