Synthesis and characterization of sucrose fatty acid polyesters. 2. Modification of the synthesis of sucrose fatty acid total esters for obtaining surface-active low-energy fat substitute
A modified process is described for the alkali-metal- catalysed synthesis of sucrose fatty acid total esters (STE). It involves transesterification of sucrose octaacetate with triglycerides (tristearin in the experiments reported) in the absence of solvents. STE were formed in yields of about 52% in the following conditions: molar ratio of triglyceride to sucrose octaacetate, 3.5:1; reaction at 120 degrees C for 4 h; catalyst (potassium) concentration 1.5%.
