A new method for the synthesis of emulsifiers in the absence of toxic solvents is described. It involves the alkali-metal-catalysed reaction of either (a) sucrose octaacetate with monoglycerides, or (b) partially acetylated sucrose (degree of substitution NOT<5) with triglycerides. By varying the degree of substitution and the molar ratio of the reactants, products with different surface-active properties can be obtained.
