The prolamin storage proteins of cereal seeds: structure and evolution



Biochemical Journal 267(1): 1-12



The structure and amino acid composition of seed prolamins in maize, Pennisetum americanum, Coix lacryma-jobi, wheat, barley, rye are compared and contrasted. The evolutionary relationships of the S-rich, S-poor and high MW prolamins are examined and the relationships of the Triticeae prolamins with seed proteins in other species is discussed.
