The proline content and stable carbon isotope ratio of genuine United Kingdom honey

In tests designed to detect sugar adulteration of honey, 102 samples of genuine UK honey were analysed for proline content and stable carbon isotope ratio (13C:12C). The data obtained were almost identical to corresponding USA data. It was concluded that C4-based adulterants (e.g. from corn syrup or sugar cane) could be detected at levels of 15% or more.
