The isolation of honey invertase (sucrase, saccharase) from rape (Brassica napus) and fir (Abies) honeys, as well as from 'honey' obtained from sugar-fed bees, is described. It was separated from other honey enzymes, especially acid phosphatase, by reverse-phase chromatography, and from other, non-active proteins by gel permeation chromatography. The behaviour of honey invertase in chromatography on anion exchangers, on hydroxylapatite and on wheat-germ lectin was investigated.
