The relationship between somatic cell count, composition and manufacturing properties of bulk milk. V. Pasteurized milk and skim milk powder

The relationship between somatic cell count, composition and manufacturing properties of bulk milk. V. Pasteurized milk and skim milk powder

Australian Journal of Dairy Technology 44(2): 57-60

The influence of somatic cell count (SCC) on the composition and quality of pasteurized milk and high-heat dried skim milk was studied. Pasteurized milk samples were organoleptically assessed after 1, 7 and 14 days storage at 4 degrees C. Data from 1 farm indicated a negative relationship between log SCC and pasteurized milk grade at the 3 assessment times (P<0.05, P<0.05 and P<0.01 resp.).
