An investigation of the aqueous solution properties of D-glucose and the maltodextrins

Physical properties (density, viscosity, heat capacity and 17O NMR relaxation rate) of aqueous solutions of D-glucose and maltodextrins (composed of up to 7 glucose units) were studied in relation to temperature, concentration and chain length, in order to provide some insight into the molecular behaviour of starch polysaccharides.
