Basic viscosity of skim milk concentrate

Skim milk was exposed to different preheat treatments (70-130 degrees C) before evaporation to up to 40-53% TS. Basic viscosity, i.e. viscosity at infinite shear, was calculated by plotting the value of viscosity ( eta ) as a linear function of the reciprocal shear rates, 1/D, and extrapolating to 1/D = 0. With shear rates of >=170/s, for freshly prepared concentrate the equation eta / eta infinity = 1 + 100/D was valid regardless of preheat treatment, TS and temp. of the concentrate.
