Comments on the suitability of electrical conductivity measurements for the evaluation of meat quality in pigs in connection with performance testing

The advantages and disadvantages of carrying out electrical conductivity tests on pig carcasses within 1 or 24 h of slaughter are considered, and possibilities of combining these values with meat pH values 24 h after slaughter for a meat quality selection criterion are discussed.
