Dietary soybean protein and cholesterol metabolism

Using diets with the protein source as the only variable, soya protein prevented hypercholesterolaemia and atherosclerosis whereas casein induced these disorders. Compared with casein, soya protein decreased the absorption of intestinal cholesterol and reduced the re-absorption of bile acids.
