Use of ultrafiltration protein concentrates of buttermilk in the manufacture of drinks and cultured milks, and as the flavouring for improving dietetic properties of traditional products resulted in products with high biological value, and containing 1.8x the amount of methionine and cystine found in whole milk, 1.9x the amount of linoleic and linolenic acids, and 1.6x the amount of phospholipids.
