Effect of extraction conditions on the yield of anthocyanins from buckwheat stems

Fiziologiya i Biokhimiya Kul'turnykh Rastenii 24(2): 183-186

Different acids of various concentrations have been studied for their effect on anthocyanes extraction from dry plant raw materials (buckwheat straw). Maximum yield of pigments is shown to be reached when using the acid with high ionization constant. Optimum concentration of such an acid (hydrochloric) is selected which provides for maximum extraction of anthocyanes.
